Shrimp and Crab Cannelloni w/ Roasted Red Pepper Sauce

My favorite station on television is the Food Network channel.  I know many of you can relate.  I love it so much that my husband often times ‘threatens’ to change cable companies just to hear me beg…I swear!  If I get him to watch one or two shows that showcase ginormous, mouth-watering burgers and I promise to make them, I’m good for another few months 😉

This recipe was featured on Diners, Drive-In’s and Dives, my personal favorite show on Food Network.  If you watch this show you know they give you close to the recipe but, not the exact recipe.  Well, most of the time.  This is where I have fun trying to duplicate it.

Though I have not had the dish featured on the show, I can say this one that I recreated is awesomeness!  I think Guy Fieri should feature me or at least high-five me 😉  Ha!

So let’s check out the shrimp and crab cannellonis. Oh and this recipe uses egg roll wrappers.  How cool is that?

Shrimp and Crab Cannelloni w/ Roasted Red Pepper Sauce

Filling:

One can (4 0z.) deveined, medium shrimp
One can (4.25 oz.) lump crabmeat
1 c. ricotta cheese
1 t. dried parsley or 1 T. fresh parsley
zest of 1 lemon
1 egg
pinch each of salt and pepper
1/3 c. milk
1/2 c. Parmesan cheese

Egg roll wrappers
Parsley and lemon for garnish

Sauce:

3 T. butter
2 c. heavy cream
2/3 c. pureed roasted red peppers
1/2 c. Parmesan cheese
2 cloves garlic, minced

Rough chop the shrimp.

Roll up the egg rolls and put two cannelloni, seam side down, into an oven proof baking dish.  Set aside.

Preheat oven to 350 degrees.

Put your sauce ingredients into a pan, except the parmesan cheese.  Heat on medium heat stirring constantly.  When warmed through, add the parmesan cheese and stir until melted and slightly thickened.

Pour sauce over cannelloni.  Cook for 15-20 minutes or until sauce is bubbly.  Top with parmesan, parsley and lemon wedges.

  2. biz319 says:

Why have I never thought to use egg roll wrappers like that??!! Genius! That’s why I like you Suzie – if we lived near each other I’d be over at your house watching Food Network all day!

  3. That looks so awesome. Do you get Cooking Channel? It is like Food Network back in the day with actual cooking shows 🙂 Monday’s episode of DDD features Perk Eatery which is right by my house, we can ride our bikes there, I am excited to watch it.

    • Suzie says:

I only get that channel when they do the free previews, like for a month at a time. I do like the channel though. I will have to watch Monday’s episode! I have three places wrote down that they have been to in MI. We tried to go to two of them last year but the wait was over 2 hours. They had just featured the shows though, maybe this year 🙂

  4. Jorie says:

Holy cow, this looks so good! My bf and I are searching for new recipes to spice up our dinners and this one should definitely be in the rotation. Thanks for sharing!

  7. This is probably my favorite recipe yet, Suzie! Crab AND shrimp? How decadent and crazy delicious!! Not to mention clever to use egg roll wrappers…you’re a genius!!

    • Suzie says:

My fellow seafood lover, I should have known you’d like this one 🙂 The egg roll wrappers I seen on the show, I can’t take credit for that but, it was a super idea!

  8. That looks seriously wholesome and delish 🙂

  9. What a great use of egg wrappers! The crab shrimp filling sounds so amazing, esp. for a seafood fan like me.

  10. Joanne says:

I loved that you mentioned that they don’t give you the exact recipe…i’ve always suspected that also! this cannelloni sounds delicious! Restaurant-quality right here!

    • Suzie says:

I read that in an article in F.N. magazine. Plus, on the show they’ll say, “Oh, and our secret ingredient goes in next” or something along those lines. Still, I enjoy coming up with my own spin!

  11. That’s a huge load of shrip goodness…
    simply drolling me,
but i think this cost me a lot, 20 minutes on the treadmile….

  12. Joseph Michael says:

  13. Sarah says:

  14. Veronica says:

Remember when I thought the show was called Diners, Dumps and Dives? LOL! I think it’s kinda catchy. I’ve been craving seafood and guess what crap I ate to satisfy it? Crab dip with imitation crab! OK, so I actually love that stuff but still. It ain’t no Shrimp and Crab Cannelloni. I need to start cooking again.

    • Suzie says:

Yes, I remember that, it still cracks me up to this day!! It is kinda’ catchy 😉 Imitation crab….NOOOOOO! Lol! I have had it twice in my life. First I thought, “Oh, my gosh this is horrible!” so I wasn’t going to try it again. Second time, a friend said “You’ll never know the difference!” in a crab salad….blech!!! I knew the difference. I cringe when I walk past it in the supermarket…ha! You don’t need to cook you just need to get to my house and I’ll cook for you!! xoxo

  15. Don says:

Thanks a lot, I just saw that episode of D,D and D and was preparing to attempt to recreate it. Now I’ll start with your version and let you know how it comes out !

  16. Jane Palermo says:

Why can’t I print the recipe. I don’t do Facebook or Twitter and too old to start

    • Suzie says:

Jane, I’m not sure why you can’t print it. Facebook and Twitter have nothing to do with it. Have you tried to copy and paste the recipe into an email? Or copy and paste onto Word? That’s the only thing I can think of. Hope that helps!

  17. Shawn C. says:

I’ve been looking for this recipe for a long time. Thanks. Although, I thought she put shallots in it.

  21. Michele Ifkovits says:

You’ve done what I was going to try by myself. Thank you for doing the work for me. I have 3 dogs in the kitchen. One son in college and I love to read, too. Saw this on Triple D, too! Thank you so much!! We’re making this for Valentine’s Day. I thought I saw a bit of nutmeg in the episode as well. I’ll try adding a pinch.

  22. Nick says:

I feel I must comment as someone still looking for this recipe today, almost a decade later! Oddly enough, the rerun was on the TV at the gym while I was on the treadmill and already hangry 😉 Thank you so much! Making this for lunch today!
