Lime Gelatin Dessert

My friend Renee posted this recipe a month or so ago.  I knew I wanted to make it right away.  I did and have made it a few times since, I just now am getting around to telling you about it.  I did not change anything in her recipe.  It was perfect as is.

I noticed the comments on her blog that many people had this dessert in their families for years.  It was actually a staple at family functions and get-togethers.  I personally had never heard of it.  Have you had this dessert before?

I’m not a huge fan of sweets but, I do like jello.  I especially like lime jello.  When I was young I spent a fair amount of time in the hospital with asthma problems.  My favorite part of being there was the jello, because you could order it anytime and trust me I did! 😉  My other favorite part was the oxygen tent, that thing was just cool…lol!  So, that is my story of why I love jello to this day.

This is a simple, light, refreshing summer dessert.  Let’s whip some up…

Lime Gelatin Dessert

2 (0.30 oz.) packages of sugar-free lime jello
1 (20 oz.) can of crushed pineapple in 100% juice
6 oz. reduced fat cream cheese, softened
1 (8 oz.) container of fat-free whipped topping (Cool Whip Free)
1/2 c. chopped walnuts

In a large bowl, dissolve the 2 packages of lime jello in 1 cup of boiling water.  Drain the pineapple, reserving the juice.  Measure out a half cup of the juice and mix with the jello.  Add the remaining juice back with the pineapple.  Set aside.

Let jello set in refrigerator for about 30 minutes or until it just starts to set.  With an electric mixer, combine the softened cream cheese with the jello.

Mix in the reserved pineapple and juice.  Fold in the whipped topping and walnuts.

Spray an 8 x 8 inch square glass baking dish lightly with cooking spray. Pour the jello mixture into the dish and spread out evenly.  Cover with plastic wrap.  Put in refrigerator and allow to set up, at least 4 hours or overnight.

To serve cut into 9 pieces.  Garnish with more fat-free whipped topping and a lime wedge if you chose.  Enjoy!  Also, thank you Renee for a wonderful recipe 🙂

  3. Oh wow, I used to make something like this and love it!! This brings back memories. I did it in 2 layers, plain lime jello on the bottom and I whipped the cream cheese jello and spread on top. It was one of my favorites, thanks for posting this.

    Never had this one but we make something similar with jello, cool-whip, cottage cheese, pineapples and either strawberries or mandarin oranges. I’ll store this recipe and try it out at the next family gathering, for sure. No point making it here just for us – it’s green, it’s got nuts…Steve would freak! 😉

        It kills me the way he is. I can screw something up totally…tried using cauliflower as rice last week…*GaG*…it was HORRID! He scoops up bite after bite saying it’s not that bad while I toss mine out for the chicks. Set green jello in front of him…*Poof* he runs away. Boyz….sheesh!

    I am in shock you used sugar free products!! Has hell frozen over too? lol I didn’t know you had asthma problems as a kid–is that something that went away over the years? Oh and no, I’ve never had this, but like some other commenters, there is a jello salad popular at gatherings that has jello, cottage cheese, cool whip, and whatever kind of fruit you want in it so it’s really similar.

      Why? I would prefer sugar free. Silly rabbit! I still have asthma, I just don’t go to the hospital unless I’m croaking…lol! You know that!! My asthma only gets really bad around cats and horses though….boo!

    my mom makes something similar with raspberry jello, and the whipped topping is on top instead of mixed in. but no nuts. nuts in jello aren’t my thing! 🙂 i’ll have to try this version (nut-less of course). 🙂

    You have such a positive memory of being n hospital and being in an oxygen tent… It really doesn’t sound that great, but you obviously found the positives 🙂 It is a testament to your character 🙂

      Well, thank you! After all the tests and pokes, I was like….bring me jello!! Lol! Or I may have had jello during some tests 😉

    Food and memories can be so intertwined. Good memories then the food is yummy. Bad memories and you could do without the food. Who would think that being in the hospital could be turned into a good food memory?! Jello “salads” are very popular in the South. I believe. They often have some creamy component mixed in. Though I am not a fan of jello, I make a jello mold at Thanksgiving that comes from a recipe of my mother-in-law. My husband can’t imagine eating Thanksgiving dinner without it. I am glad to hear that your asthma is more under control then when you were a child! I have trouble breathing around cats too. Its not fun.:)

      Yes, food and memories are intertwined. I went about 15 years not eating hot dogs because my mom used to boil them, which I found disgusting. Now, on the grill, I do like them on occasion 🙂 I have to have my cranberry and jello at Thanksgiving too! I just try to avoid cats and horses at all costs.
