Buffalo Balls (just check it out)

This is one of two Superbowl recipes I have for you before the BIG DAY!  They both involve hot sauce and in ways are similar but, they are also two different creations.

Instead of messy wings,  that consist of orange hands, an orange face and 2,000 used napkins in the trash, these are buffalo balls.  You can just have fun saying the name alone, I know I do 😉

Onto the balls…

Meatballs:

1.25 lb. package of ground chicken or turkey (I used turkey)
2 oz. softened cream cheese
2 eggs
3 T. crumbled blue cheese
1/2 t. ground black pepper

Sauce:

1/2 stick unsalted butter
1/2 c. Frank’s Red Hot Sauce

Combine all of the meatball ingredients into a large bowl.  No need to add salt as the hot sauce and blue cheese provide plenty of salt.  The mix will be sticky.  If you wet your hands, it’s much easier to make the balls without them sticking to you.  (What kind of blog is this anyways!? 😉 )Form into 1 inch balls and place on a greased cookie sheet.  Bake at 350 degrees for 10 minutes.Meatballs (buffalo balls)

While they are baking combine the hot sauce and the butter in a large microwave safe dish.  Heat until butter melts.  Blend together with a whisk.buffalo sauce

After the 10 minutes, remove balls and carefully dunk into the hot sauce mixture. buffalo balls

Evenly coat them and put them back onto the cookie sheet and bake for an additional 12-15 minutes.  If you have extra sauce you can pour it over the meatballs if you like the additional heat ( I do!!).

Serve with celery sticks and blue cheese dressing to complete the ensemble!buffalo balls

Yield:  This made 44 meatballs.  I doubled the sauce (only) recipe and it was perfect!!

  1. You think this would work with ground pork or would it be too dry? My husband is allergic to chicken (all poultry, in fact) and I feel like he misses out on the wonderful flavor that buffalo sauce brings! I think he would love these.

      I think ground pork would work. You have the eggs, cream cheese and the blue cheese to keep them moist. Then the hot sauce mixture. I would certainly try it Carrie. It’s too bad he’s allergic to poultry, that’s a bummer!

      Might want to add maybe 1/2 cup of bread crumbs or panko. It will absorb the juices and keep your meat a lil more moist.

    Well that is certainly an attention grabbing headline, chica! The recipe looks to-die-for good!! The rugbrat will be gone so Steve & I can make some on Friday and just feast on these all weekend long…yum! 🙂

      Lol!! Oh what fun we have when talking about balls…ha!! 😉 I made these hoping the hubs would like them. He hated them b/c of the blue cheese, so who ate them all? ME!! 🙂 I don’t care about the Superbowl either, I just post recipes b/c I know lots of people host parties. We go to parties sometimes, but all I care about is the food too!! xoxo

    I’m super excited by this! We don’t do the Superbowl party thing (sad for us) but something like this would be perfect for our family Christmas party! I usually bring meatballs in a cranberry chili sauce but these would be great too!   16. I think I like this version so much better than the wings. It certainly is easier to eat and doesn’t leave a mess of bones that the dogs could get into. Great recipe!
