Parmesan Chicken Bites

I’m always looking for new dishes to take to a potluck.  It’s that inner competitiveness that makes me want to produce the best dish, you know the one that’s gone first and the one that will leave people wanting more.  Yes, those of us who enjoy baking and/or cooking will have some of that ‘motivation’ in each of us.  I just happen to have a lot 😉

Well, this dish hit the mark on the “Can you pulleeeeze make that again? scale.  It was a hit and though I can’t tell you if it was gone first I can say by the end of the day my big ole tin pan was empty…yay!

So I give unto you… (come on where’s that from?  any guesses?)

Parmesan Chicken

1 clove garlic, minced
1 stick unsalted butter (1/2 cup or 1/4 pound), melted
1 cup dried bread crumbs
1/3 cup grated Parmesan cheese (or 2/3 cup if you are using a Microplane zester)
2 Tbsp chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon garlic salt
A large pinch of Italian seasoning (herb mix)
1/8 teaspoon ground black pepper
2 lbs. of skinless, boneless, chicken meat, cut into pieces no larger than 2×2 inches (think nuggets)

Marinara sauce

Preheat oven to 450°F. Pat the chicken pieces dry with paper towels.

In a bowl, combine the minced garlic with the melted butter. In another bowl mix together the bread crumbs, Parmesan, parsley, salt, garlic salt, Italian seasoning, and pepper.

Dip chicken pieces into garlic butter, then into crumb mixture to coat.  Place on a non-stick cookie sheet, so that they’re not touching one another.

Drizzle chicken bites with remaining garlic butter and bake uncovered 15 minutes, or until chicken is cooked through and juices run clear. 

 Serve with warm marinara sauce for dipping. 

I wish I had a tin full now…*sigh*!

    I must make this for my next potluck! Garlic butter . . . that alone has me sold. Not to mention the crunchy pile of Parmesan-crusted chicken. Wow.

  3. Those would definitely appeal to pretty much everyone (except my husband), and they are inexpensive and simple. Great idea, I just need to find a pot luck to go to! 🙂

    I get that, but I’m only that way with my desserts. As far as the main dishes, I make sure whatever I bring is good, but it never occurred to me to be competitive. But with desserts, that’s where I shine so I def try to outdo everyone-haha. Also, I tend to want to bring a LOT of stuff to a potluck. This came from my Mom-we always brought more than anyone else and I continue that tradition now. So if I don’t’ win in flavor, I at least win in quantity. Anyway, this sounds fab!!!! Go Suzie, winner of the potluck yummy competition! lol

    “I give unto you” is used in the Bible (“A new commandment I give unto you, That ye love one another; as I have loved you, that ye also love one another.” John 13:34, “Peace I leave with you, my peace I give unto you: not as the world giveth, give I unto you.” John 14:27, etc) but I’m thinking you’re probably quoting a movie…and sorry I have no clue!

      I could totally see you outshining everyone in the dessert catagory! I always bring at least two things for a potluck, it must be because we like to eat we want to see lots of food…lol! 😉
      ‘I give unto you’ in this case was from a Food Network show called Iron Chef, he always says that as he reveals the “mystery” ingredient for that show. But, hey I learned something new from you 🙂
